Peanut Butter Swirl

After roaming around my kitchen for about 5 minutes, I finally decided to try something new that has been on my list for a while:  Peanut Butter Swirl Pancakes.  I saw an idea for Cinnamon Roll Pancakes on Pinterest a while back (which I still intend to try), then I saw the idea for Peanut Butter Swirl Pancakes on OhSheGlows. and that seemed more urgent.
Oh, it came out so beautiful!
I used Kodiak Cake Pancake Mix to make 1 big pancake.  When it started to bubble, I used a ziplock baggie to swirl a peanut butter and applesauce mixture (1 heaping Tbsp. peanut butter + 1 Tbsp. apple sauce) as seen above.  It went better than anticipated.
The result was a fluffy pancake with warm, slightly sweet peanut butter in every bite.
I added a little maple syrup and cinnamon sugar also!
I liked the way the peanut butter mixture got slightly crispy.  To be honest, it was kind of plain, but I really liked it when I added a little maple syrup.  I also put a little toasted coconut in the pancake batter just for fun.  I will definitely make these again when Cliff is home (they would be good with butter on top too).  I think I will also try swirling nutella sometime!  I recommend you try these pancakes.  The Kodiak Mix made it really easy because you only add water!
I was planning on having a veggie burger for lunch but ran out of time, so I had another green chocolate monster.  I didn't bother taking a picture, I don't want to bore you.  I work again tonight and Cliff will be here when I get home so I am pumped.  Hope everyone is having a good week..it's practically Friday.  Also, my good friend Kristen and I were chatting today and we both have a major craving for cookie dough...I think I may need to make cookie dough dip this weekend...yipeeee!

  1. These pancakes look yummy! I have a question, did you turn the pancake once you put on the PB? I was thinking that would stick to the pan, but you said they PB was crisp (or something like that) so that made me think you did. Just wondering.

  2. You put the peanut butter on as the pancake starts to bubble. Flip the pancake and it does not stick to the pan-I was amazed!
