Potato Nachos

I am totally hooked on Potato Nachos!  We discovered them at our favorite mexican restaraunt (which is why it is our favorite).  The other day I made pulled pork in the crock-pot (coming soon) and used some of it to make potato nachos.  We both looked at each other and decided that was the best way to eat pulled pork.  You could make the nachos with any meat really, but you have to try them.
Thinly sliced potatoes topped with your favorite meat and cheese
We served ours with guacamole and enchilada sauce (mild from can)
First you thinly slice potatoes, toss them in oil and bake (about 30 min total)
When potaotes are done, top with your favorite meat and cheese
 Bake until cheese melts
I heated enchilada sauce on the stove to drizzle over our nachos (great flavor)

Potato Nachos
3 small or 2 large potatoes, washed
1-2 Tbsp. Olive Oil
Seasonings: Salt, pepper, Tony's, paprika (just a little), garlic salt
cooked meat of your choice (chicken or steak would be really good)
1 cup shredded cheese or more if you'de like
1/2 can enchilada sauce (just the normal small can)
Guacamole or avacado to top

Preheat oven to 400.   Thinly slice potatoes (I used my food processor because it cuts them evenly).  Try to slice them as even as possible so they cook evenly.  Place potatoes in large bowl or large ziplock and toss with olive oil and seasonings.  Place on a large cookie sheet lined with non-stick foil or parchment.  Bake for 20 minutes, flip the potatoes and bake for 10 more minutes.  Top with your meat and cheese and bake for 5-10 minutes longer (until cheese is melted).  Heat enchilada sauce on the stove.  Plate your nachos and drizzle with sauce.  Serve with guacamole.  Enjoy

Roast Many Ways

What is better than homemade roast?  Making awesome meals with the leftovers.  I told Cliff that I think I like the leftovers better.  My favorite way to use the roast was for breakfast burritos.  Thursday afternoon I made Make Ahead Breakfast Burritos.  If you do not have a lot of time for breakfast in the morning or want a no-fuss weekend breakfast, you have to try these.  Actually, you don't need a reason, just try them!
If only you could taste this.  Cliff ate two and then had another one for lunch
 Eggs, potato, roast, bell pepper
First I cooked the potato cubes in a hot skillet with oil.  I put them on a plate and added shredded roast and a few bell peppers.  I just let that brown a little and then put it on a plate so I could cook my eggs
When the eggs are almost cooked through, add everything to the skillet
Turn off the heat and stir.
When you are ready to use your mix you can just heat it in the microwave while you put tortillas on a hot skillet.  Put it all together with cheese.  They were so yummy.  Hope you try these.  Also, you could use different types of meat if you don't have roast.  Another great way to eat leftover roast is nachos!
Layer chips, cheese, shredded roast and refried beans
Bake at 400 for about 10 minutes
Nice melty cheese!
We topped them with lettuce, tomato and salsa
I made some awesome cookies for dessert and we had a game night.  We played Pictionary and it was really funny
These were made from a cookie mix that Danielle gave us at Christmas.  They were amazing.  I topped some of them with Reese's eggs and Rolos.  I ate 3 because they were so good.  My favorite were the ones topped with Reese's:)
Hope everyone is having a great weekend.  I have another busy week coming up but I plan on blogging a little more than last week.

Busy Busy

Happy Friday everyone!  This week has flown by.  I have had the chance to cook a few good meals between all my running around.  One day we had baked black bean nachos!
So good.  Cliff had corn, beans and chicken and I had beef and beans.  I love them baked but don't always have the time.  I did these at 400 for about 10 minutes
Topped with lettuce, tomato, avocado and salsa
Last night I made a really good vegetable alfredo pasta.
I had opened a jar of alfredo for our pinky pizza, so I had been brainstorming how I wanted to use the remaining sauce.  I decided to sautee some zucchini and mixed frozen bell peppers in a little olive oil.  I added crushed garlic and a lot of Italian seasoning and poured my sauce in.
I also added some diced ham and brought this to a simmer.  I boiled fettuccine noodles and added them to this pan.  It made about 4 servings so I am going to have this for lunch!
Served with a little Cran-Grape juice (random I know, but it was leftover from when Cliff's parents came and I am kind of hooked on it).
This morning I woke up early so I could go to Body Pump early and get lots done before work.  I made a pumkin chocolate pb banana smoothie (still trying to use up my pumpkin).  It was not delicious but at least it was nutritious!
My Dunkin Donuts french vanilla coffee was amazing:)
Have a great weekend everyone!

Repeats and Leftovers

I don't really want to bore you with repeats and leftovers but I really like blogging so I guess I am going to have to:)  I started the week with leftover pasta, pizza and chicken taco stuff.  I am almost done with all of it.  I made loaded nachos last night so that was a nice change.
I layered cheese and chicken and then microwaved it for about 45 seconds.
Topped this with warm refried beans and then the rest!
Lettuce, tomato, avocado, salsa-they were very filling by the way.
Awesome leftover pizza and a smoothie (I have had a smoothie pretty much every day this week).
I will catch you up on some of my breakfasts!  I have basically been having oatmeal or Kodiak pancakes for breakfast every weekday since I found out about my high cholesterol.  Thankfully I am not sick of it yet.  One of my favorite ways to eat my homemade instant oatmeal is to put craisins, granola and peanut butter on top!
The granola makes me feel full for a long time:)
This is my typical granola pancake before I load it with peanut butter, chocolate and fruit!
Okay, I also but butter on this...butter and peanut butter together with cinnamon sugar is so good-you have to try it.  Put the peanut butter on first, then a little butter on top of that...then chocolate and cinnamon sugar:)  I had women's Bible study today so I also snuck a little piece of cinnamon roll!   I came home and went for an awesome run because the weather is beautiful here:)
Sorry for this ugly picture but I had an avocado, tomato and cheese sandwich-I think this is my favorite way to eat avocado!
This was some leftover fruit from Bible Study!  It was very yummy with white chocolate strawberry yogurt.
I can't believe it is already Thursday.  This week has flown by and I am ready for the weekend.  I will be cooking some new stuff so get excited:)  Hope you are having a great day and see you soon.  P.S. I am craving chocolate like a mad woman so maybe I will get to make some awesome dessert this weekend!

My Favorite Custard

We have an awesome burger and custard place here and I have found my favorite creation.  Any guesses?  A two scoop sundae with chocolate custard, peanut butter, and reese's cups.
In case you were wondering, Cliff got snickers with caramel.  We also tried their cheese curds which are little battered and fried cheese balls.  We both have tiny stomach aches...but it was worth it!
Before Church we fueled up with apple bran muffins, sausage, and milk.
Our pastor taught a great message this morning about reaching out to people.  He spoke out of Romans 10 about being on our mission for God everywhere we go.  Romans is a great book.
We had upside-down nachos!  We only had small pieces of tortilla chips and fritos, so I couldn't make normal nachos.  In place of the typical nachos...I just made them with the chips on top.
 Black beans, jalapenos, and cheese
Top with your chips and then heat in the oven at 400 for about ten minutes.  They were delicious...pretty much like nachos meet taco salad!
We went to Culver's with Ben and Danielle and then came to our place to watch The Big Year...we liked it.  It was a funny, clean movie!  Hope everyone has had a great weekend.
