Healthy Peanut Butter Balls

I love Buckeyes.  I could eat my body weight in them but when I do that my heart wants to explode from all the sugar.  Ha, I have had my fair share of those tasty morsels.  The other day I got to thinking that there was probably a healthy version of sorts.  So, I got on Pinterest and typed in Healthy Peanut Butter Balls.  I was amazed at how many options I had to choose from.  As usual, I decided to make my own version by taking bits and pieces from each recipe. Good news is, they are actually healthy and I'm happy to say they taste amazing!
 I made a few varieties
This was my favorite (rolled in cocoa powder), and yes, I have had time to sample them all!
My list of healthy ingredients, recipe is below!  Just combine everything and then roll them into balls.  When I had rolled out about half of the mixture, I added mini chocolate chips!
I rolled some in cocoa powder, crushed pretzels, and heath pieces
 Are you drooling?
You have to make these, Cliff ate 5 of them the first day and he doesn't do that very often.  He kept saying, those are so good!
I have been eating about 4 a day.  Next time I am going to dip some of them in melted chocolate

Healthy Peanut Butter Balls
1 cup quick cooking oats
1 cup dry milk
1 cup peanut butter (smooth or creamy)
1/4 cup toasted wheat germ
2 Tbsp. flax
1/4 cup honey
1/4 cup maple syrup
1/2 tsp vanilla

Place all ingredients into a large mixing bowl.  Mix until well combined, it takes a little while for it to all mix.  Spoon out pieces of the mixture and roll into balls.  *I added mini chocolate chips to half of my mixture. Roll balls in a variety of coatings such as:
Crushed pretzels, cocoa powder, health pieces, or dip them in dipping chocolate
Honestly, I like all the varieties I made.  The ones rolled in cocoa powder are my favorite, then the heath, then pretzel with chocolate chips.  I recommend the variety though because it is a little more fun.  I bought some dipping chocolate today, so I see those in my near future.  You have to try these, you won't regret it!!
Hope everyone is having a great week.  I am glad tomorrow is Friday and I am looking forward to some much needed rest.
But thanks be to God, who always leads us as captives in Christ’s triumphal procession and uses us to spread the aroma of the knowledge of him everywhere.  For we are to God the pleasing aroma of Christ among those who are being saved and those who are perishing.
