Peaches and Cream

I made some more of my instant oatmeal this morning and it turned out so good.  I was very careful to follow the recipe so the one at the link above is accurate!  I love my instant oatmeal for several reasons:
  • I can decide how much to measure out (big or small-the packets are not enough for me)
  • I can control how much sugar goes in
  • It makes a big batch and it is a very easy breakfast in the morning
  • It is cheaper than buying the packets-and healthier!
Okay, so here is a picture of how much it makes.  This tube is about 2/3 full so that would be approximately 20 half-cup servings!  I usually do a heaping half cup for my breakfast!

I did some reading this morning then went to my crazy cardio class.  There was a sub today so it felt more bearable.  I was thankful because if you check out the picture below...my chins are trying to get chin splints.  Last night I put on a lot of Tiger Balm, then socks and it really helped.  They didn't bother me today, but I am trying to take it easy so I don't make them worse.

I got a lot done today but did not cook anything.  I have a lot of leftovers right now so I am trying to finish them up.  Tomorrow I will make something with my taco leftovers and finish off my pizza.  I will be cooking again soon!  I have also been enjoying the peanut clusters and brownies that are leftover.  Hope everyone had a good day.  This scripture really stood out to me today in my reading...I needed it this morning

Pac-Man Pancake

First of all...Happy Monday!  Sorry this is coming a little late.  I thought this was awesome and by the way, I love Pac-Man
Cliffs parents have been in town and we have been really busy having fun.  I got to cook some, and we ate out quite a bit.  It was great.  Friday we went out to eat and walk around by the river walk.  It was beautiful.  Saturday we went to the Houston Rodeo!  It was so awesome and we had a great time.

 This part was very fun.  It was a sheep herding dog show and I loved every minute.
 Poor cows-but they were so cute.
Garlic chicken burrito with black beans and white cheese sauce along with a potato brick!  SO good.
 My favorite thing we ate all day.

 Brad Paisley played after the rodeo.  We had a great time watching the rodeo and stayed for a little of the concert..it was packed.

Sorry some of the pictures are dark!  I have to admit I was like a crazy little kid at the fair.  I was so wound up when we got home at 11pm, I could not stop talking.  I made more peanut clusters for Brent and bounced around out apt while everyone looked at me like I was crazy.  I may or may not have done some push-ups.  Believe it or not, even though "I was not tired," I fell asleep as soon as I hit the pillow.  It was great.  Yesterday we went to church and then had a picnic. The guys went fishing while Dawna and me went walking.  It was Dawna's Birthday so we got some pizza and came home to watch The Help (love that movie).  I made some brownies and we had ice cream for dessert.  It was great.

Thankfully, I finally got my pizza craving fixed (even better, there are leftovers)!

Fun With the Family

We have had a good time with the family so far.  I have only cooked a few times and we have gone out the rest.  Thursday I made us all smoothies and I had a peanut butter English muffin to go with it.

This meal was great.  We had chicken tacos with pico and home made beans.
I am going to post my crock-pot chicken recipe officially because it is so good and really handy when you don't have time to thaw out chicken or bake it.  The beans here are my Vegetarian Refried Beans which are awesome.  Pico is just tomatoes, garlic, jalapeno, lime juice, and cilantro.  I love it on stuff like this.  Oh ya, and guacamole.  Brent loves guacamole and went on and on about it-he is easy to please!  We really enjoyed our dinner and then sat out on our back porch for a while.  The peanut clusters I made are almost gone because we have all been eating them like crazy.  I think I am going to need to get chocolate from the grocery store tomorrow because Brent might freak out if we run out ha!!  Okay, here's the chicken

Crock-pot Chicken
Frozen boneless, skinless chicken breast (I did a little over a pound...you could do more or less..but cook time will vary a little)
1/4 cup water
seasoning of choice:  taco seasoning, garlic salt, fajita seasoning, creole, really you can make it any flavor you want depending on what you are serving it with.  For the tacos I did taco seasoning and that is it.

Place frozen chicken in a crock-pot.  Pour in water and turn heat to high for about 2 1/2-3 hours.  If you did low heat it would take a little longer...about 5 hours.  I always do it on high and put it in about 3 hours before I want it.  I have done low before and it works well if you have work or a busy day.  Once it is cooked through, I shred it with a fork or you can cut it with a knife.  It is moist and delicious. 

I think we are going to go to the rodeo tomorrow!  Tickets are kind of hard to find at the moment but hopefully some will go up for grabs in the morning.  Dawna's B-day is Sunday so hopefully I will get a chance to make a cake tomorrow.  We will see.  Hope everyone has a great weekend.

Almost Here

Yipee our company is almost here.  I am going to pick them up tonight at the airport.  I had a pretty busy day with work and errands but did manage to make a couple good meals.  This morning I made an old favorite-peaches and cream oatmeal.  I use my homemade instant oats and add a little container of diced peaches in 100% juice.  It is so good.
 With a big scoop of peanut butter plus a sprinkle of granola.  Let's just say my peanut butter cravings are a little higher than usual.  I would have like a little oatmeal with my peanut butter this morning.

 Cliff's Mom loves hot chocolate!  I was out of my homemade supply so I did some major calculating and made a mini batch.  I will post the mini batch recipe if it tastes awesome (and I think it will).  I made milkshake cereal for a snack then headed to work.  After work I made an easy dinner.

 I also had some salsa with it and it was delish.
Two of these bad boys for dessert...sorry Brent I am eating your supply!  At least I made myself stop at two.
