Happy New Year Black Eyed Peas

Yep we have always done black eyed peas on new years day.  We would choke them down as my Mom would be saying we had to a least have a couple.  It wasn't until about 4 years ago that my Mom started making a really delicious soup with them.  Last year I discovered a very yummy way to have black eyed peas, so I have come to the conclusion they can be very delicious if you cook them the right way.  Even though I love the soup version, a new recipe caught my eye this year.  I made it almost exactly the same and we really liked it.
 Tex Mex Black-Eyed Peas
 Rice, topped with cheese
 Topped with black eyed peas, rotel, spinach and bacon.
 More cheese and bake!
I topped mine with avocado, sour cream and salsa
Just so you know, when I had seconds, I didn't top it with anything and I liked it better without stuff added to it.
The only thing I changed in this recipe:
  • I layered the rice intead of mixing it all together
  • I used frozen spinach (about 2 cups) instead of fresh
  • I put the cheese on top to begin with and baked at 375 for about 10 minutes
ENJOY!!  Also, Cliff said he would like to try it sometime with black beans and chicken instead of black-eyed peas and bacon!  I think that is a good idea:)
