Homemade Bagel Chips and Chicken Salad

As you probably know, I have had to get creative with cold lunches because with my job we work in unfinished houses.  I take my lunch in an ice chest and there is no way to heat it up:(  I am trying to find new and creative ideas.  Sunday night I decided to make chicken salad for my lunch.  A couple weeks ago a co-worker brought chicken salad and bagel chips-it was all so delicious I decided to re-create it!

 1 can of chicken, 1 celery stalk diced, about 3/4 cup grapes cut, 2 rounded Tbsp Mayo, 1 rounded Tbsp sour cream, 1/4 tsp. salt, pepper to taste
 Stir well and refrigerate
Then I made some homemade bagel chips for the first time.  I used two honey wheat bagels and sliced each bagel into six slices.  It is a little tricky to get them this thin so be careful with your knife...Cliff kept saying, BE CAREFUL!
 Then I put drizzled olive oil over them and rubbed it in with my oil brush.  I sprayed pam on the other side.  Sprinkle with your favorite seasonings, I used garlic salt and pepper and a few onion flakes.  Next time I will try it with simple salt and pepper!
Bake at 400 for 10 minutes, flipping after five.  After I flipped mine I added Parmesan cheese!  You may need to play with the time/oven temp depending on your oven.  These were great with my chicken salad, I have had it two days in a row now!  Enjoy:)
Simple Chicken Salad
1 can of chicken (13oz), drained and shredded
1 stalk celery, diced
3/4 cup grapes, sliced (doesn't have to be exact)
2 rounded Tbsp mayo (I like the olive oil mayo)
1 rounded Tbsp sour cream
1/4 tsp salt
pepper to taste

Mix all ingredients together in a bowl and refrigerate.  Enjoy with bagel chips if you are up for it!

Easy Bagel Chips
2 bagels of your choosing
1 Tbsp olive oil
Pam cooking spray
S & P to taste
Fresh Parmesan (optional)

Preheat oven to 400.  Slice each bagel into six thin slices.  Place on a large cookie sheet lined with foil.  Rub olive oil on one side and season.  Flip and spray pam on the other side, season again if you want.  Bake for 5-6 minutes and then flip (add cheese if you want) and bake 5-6 more minutes.  Let cool and store in an airtight container.

  1. Yum! The bagel chips look awesome! I actually have been wanting some to put into some trail mix and that would be perfect! Yummy!

  2. That would be yummy. You might try cutting them the other direction so you would have little discs!
